🍰 Star-shaped Cinnamon Doughnuts with Nut Glaze

Ingredients
- 0.5 cube yeast (21 g)
- 125 ml lukewarm milk (3.5 % fat)
- 250 g spelt flour Type 630
- 1 tbsp spelt flour Type 630 (for working)
- 1.5 tsp cinnamon
- salt
- 2 tbsp raw cane sugar (20 g each)
- 1 egg
- 3 tbsp melted butter (15 g each)
- vegetable oil (for frying)
- 200 g milk chocolate coating
- 70 g hazelnut kernels
Instructions
- 1. Crumble the fresh yeast into a bowl with lukewarm milk and stir until dissolved.
- 2. Add flour, cinnamon, a pinch of salt, sugar, an egg, and butter to a large mixing bowl.
- 3. Pour the yeast milk over the dry ingredients and knead everything by hand for about 5 minutes until you have a smooth dough.
- 4. If the dough is too sticky, knein in a little more flour; if it is too dry, add a little lukewarm milk.
- 5. Cover the bowl and let the dough rise in a warm place for approx. 30 minutes.
- 6. Sprinkle some flour on your work surface and knead the risen dough briefly again.
- 7. Roll out the dough with a rolling pin to a thickness of approx. 1 cm.
- 8. Cut out 12 stars from the dough using a star-shaped cookie cutter.
- 9. Use the rounded end of a wooden spoon handle to punch out the center hole in each star to form the donut shape.
- 10. Cover the stars with a cloth and let them rest for another approx. 30 minutes.
- 11. Heat plenty of oil in a large pot to approx. 175 °C.
- 12. Fry the stars in batches in the hot oil and fry them until golden brown for 4 to 5 minutes.
- 13. Turn the doughnuts once in the middle of the frying time so they bake evenly.
- 14. Remove the finished doughnuts from the oil and let them drain on kitchen paper.
- 15. Place the doughnuts on a wire rack and let them cool completely for 10 minutes.
- 16. Chop the chocolate coating into small pieces.
- 17. Melt the chocolate pieces over a hot water bath until liquid.
- 18. Let the melted chocolate cool down slightly so it is not too runny.
- 19. Finely chop the hazelnuts.
- 20. Dip each cooled doughnut completely into the chocolate so that it is fully coated.
- 21. Immediately sprinkle the wet doughnuts with the chopped hazelnuts.
- 22. Let the coated doughnuts air dry until the chocolate is set.
