🍰 Cinnamon Crème Brûlée

Ingredients
- 0.5 l milk
- 1 vanilla pod
- 1 piece cinnamon stick
- 2 eggs
- 4 egg yolks
- 80 g sugar
- 100 g sugar
- 200 g fresh or frozen raspberries
Instructions
- 1. Pour the milk into a pot.
- 2. Slice the vanilla pod lengthwise.
- 3. Add the whole vanilla pod and the cinnamon stick to the milk.
- 4. Bring the milk to a slow boil.
- 5. Remove the pot from the heat.
- 6. Place the eggs (including the yolks) and the sugar into a bowl.
- 7. Whisk the mixture with a whisk for 10 to 15 minutes.
- 8. Continue whisking until the mixture is pale yellow and creamy.
- 9. Remove the vanilla pod and the cinnamon stick from the milk.
- 10. Stir the warm milk into the egg cream in a thin stream.
- 11. Place the bowl into a gently simmering water bath.
- 12. Continue whisking the cream with the whisk for about 15 minutes.
- 13. Continue whisking until the cream has become significantly thicker.
- 14. Fill the vanilla cream into four small serving ramekins.
