  1. 1. Let the puff pastry thaw at room temperature.
  2. 2. Preheat the oven to 180 degrees Celsius fan-assisted.
  3. 3. Brush the tart molds with a little oil.
  4. 4. Roll out the dough on a floured surface to a thickness of 3 to 4 millimeters.
  5. 5. Cut out circles from the dough that are slightly larger than your tart molds.
  6. 6. Place the dough circles into the molds and press them gently inside.
  7. 7. Trim the excess dough from the edges of the molds with a knife.
  8. 8. Peel the onions and cut them into thin wedges.
  9. 9. Whisk the eggs in a bowl with the cream and crème fraîche.
  10. 10. Finely chop the parsley and stir it into the egg mixture.
  11. 11. Season the liquid with salt and pepper to taste.
  12. 12. Distribute the onion wedges evenly over the dough bases.
  13. 13. Carefully pour the egg mixture over the onions.
  14. 14. Place one slice of goat cheese on each tart.
  15. 15. Bake the tarts for about 30 minutes in the oven until golden brown.
  16. 16. Carefully remove the tarts from the molds.
  17. 17. Sprinkle them with fresh parsley and serve immediately.
