  1. 1. Slice the beetroot into rounds about 1 cm thick.
  2. 2. Slice the goat cheese into rounds about 1 cm thick.
  3. 3. Place the slices side by side on a cutting board.
  4. 4. Use a round cookie cutter (3 or 4 cm in diameter) to cut circles out of the beetroot slices.
  5. 5. Use a round cookie cutter with a fluted edge (same diameter as the beetroot cutter) to cut circles out of the goat cheese slices.
  6. 6. Thoroughly wash the parsley and sorrel.
  7. 7. Shake the greens dry.
  8. 8. Take four nice sorrel leaves and set them aside for decoration.
  9. 9. Remove the remaining sorrel leaves from the stems.
  10. 10. Puree the leaves with oil and lemon juice to make a sauce.
  11. 11. Thin the sauce with a little water if necessary.
  12. 12. Season the sauce to taste with sea salt.
  13. 13. Drizzle the sauce onto the plates.
  14. 14. Stack beetroot and goat cheese circles alternately to form towers.
  15. 15. Garnish the towers with a sorrel leaf.
