🍳 Goat Cheese Omelet with Arugula

Ingredients
- 4 egg whites (S)
- 2 eggs (S)
- 1 small handful arugula
- 2 tomatoes
- 1 tsp olive oil
- salt
- pepper
- 50 g young goat cheese
Instructions
- 1. Separate four eggs. Place only the egg whites into a bowl.
- 2. Add two whole eggs to the egg whites.
- 3. Whisk the egg mixture vigorously with a whisk.
- 4. Wash the arugula thoroughly.
- 5. Dry the greens using a salad spinner or kitchen towel.
- 6. Roughly chop the arugula with a large knife.
- 7. Wash the tomatoes.
- 8. Cut out the hard stem areas in a wedge shape.
- 9. Slice the tomatoes into thick rounds.
- 10. Heat a non-stick pan with a diameter of 24 centimeters.
- 11. Spread the oil evenly across the hot pan.
- 12. Pour the egg mixture into the pan.
- 13. Season the egg with salt and pepper.
- 14. Let the omelet set over medium heat.
- 15. Ensure the surface remains slightly liquid.
- 16. Carefully flip the omelet using a plate.
- 17. Crumble the goat cheese over the omelet with your fingers.
- 18. Place the finished omelet onto a serving plate.
- 19. Top the omelet with the tomato slices.
- 20. Sprinkle the chopped arugula over the top.
- 21. Serve the dish with whole wheat toast.
