🍽️ Goat Cheese with Plums

Ingredients
- 600 g ripe plums
- 2 small red onions
- 60 g sugar
- 1 cinnamon stick
- 2 star anise
- 200 ml dry red wine
- 1 sprig rosemary
- 2 handfuls baby spinach
- 8 goat cheese medallions (approx. 40 g each)
- 2 tbsp flour (for dredging)
- honey (to taste)
- pepper (freshly ground)
Instructions
- 1. Wash the plums thoroughly, halve them, and remove the pits. Peel the onions and cut into thin strips. Put everything in a pan together with the sugar, cinnamon stick, and star anise. Add the red wine and simmer gently for 5-7 minutes.
- 2. Rinse the rosemary, pat dry, and pick off the needles. Wash and dry the spinach as well.
- 3. Dredge the goat cheese medallions in flour and fry in a non-stick pan for about 1-2 minutes on each side until golden brown.
- 4. Finish the compote with honey and pepper. Add the fried cheese medallions along with the rosemary and spinach and serve immediately.
