  1. 1. Wash the plums thoroughly, halve them, and remove the pits. Peel the onions and cut into thin strips. Put everything in a pan together with the sugar, cinnamon stick, and star anise. Add the red wine and simmer gently for 5-7 minutes.
  2. 2. Rinse the rosemary, pat dry, and pick off the needles. Wash and dry the spinach as well.
  3. 3. Dredge the goat cheese medallions in flour and fry in a non-stick pan for about 1-2 minutes on each side until golden brown.
  4. 4. Finish the compote with honey and pepper. Add the fried cheese medallions along with the rosemary and spinach and serve immediately.
