🍽️ Goat Cheese Roll with Fresh Tomato and Bean Salad

Ingredients
- 1 goat cheese roll (about 200 g)
- 2 tbsp coarsely ground pepper
- 1 tbsp chopped chives
- 1 tbsp chopped parsley
- 2 tbsp basil (cut into strips)
- 1 finely chopped garlic clove
- 2 onions
- olive oil
- 4 tomatoes
- 2 tbsp small white beans (from the can)
- salt
- pepper (from the mill)
Instructions
- 1. Mix pepper and herbs in a small bowl.
- 2. Spread the spice mixture onto a clean work surface.
- 3. Roll the goat cheese log in the spices.
- 4. Press the spices gently so they stick well.
- 5. Slice the spiced cheese roll into even rounds.
- 6. Rinse the tomatoes under running water.
- 7. Place the tomatoes briefly in boiling water (this is called blanching).
- 8. Peel the skin off the tomatoes.
- 9. Halve the tomatoes and remove the core.
- 10. Dice the tomato flesh into small cubes.
- 11. Place the tomato cubes into a bowl.
- 12. Add two tablespoons of olive oil.
- 13. Season with salt and pepper to taste.
- 14. Add chopped garlic and basil.
- 15. Add the beans to the tomato mixture.
- 16. Mix all salad ingredients well together.
- 17. Peel the onion.
- 18. Slice the onion into thin rings.
- 19. Heat oil in a pan until it is hot.
- 20. Fry the onion rings until crispy and golden brown.
- 21. Remove the onions from the pan.
- 22. Place them on kitchen paper to absorb excess oil.
- 23. Place the goat cheese slices on small plates.
- 24. Serve the tomato and bean salad alongside.
- 25. Garnish with the crispy onion rings.
- 26. Decorate with fresh rosemary sprigs if desired.
- 27. Serve the dish with a piece of white bread.
