🍽️ Crunchy Toast with Goat Cheese and Tomatoes

Ingredients
- 4 slices dark bread (or whole wheat toast bread)
- 2 tbsp olive oil (extra virgin)
- 2 garlic cloves
- 3 large tomatoes
- 1 goat cheese
- salt
- pepper (from the mill)
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes in half.
- 3. Remove the hard core from the tomato halves.
- 4. Dice the tomato flesh into small cubes.
- 5. Peel the garlic clove.
- 6. Mince the garlic very finely.
- 7. Place the diced tomatoes in a bowl.
- 8. Add the finely chopped garlic.
- 9. Drizzle some oil over the tomato mixture.
- 10. Season the mixture with salt.
- 11. Season the mixture with pepper.
- 12. Mix all ingredients well together.
- 13. Toast the bread until dark brown.
- 14. Drizzle the toasted bread slices with a little olive oil.
- 15. Lightly salt the bread slices drizzled with oil.
- 16. Cut the goat cheese into four equal parts.
- 17. Place one quarter of goat cheese on each bread slice.
- 18. Add one to two tablespoons of the tomato mixture on top of the cheese.
- 19. Serve the dish immediately.
- 20. Season the toast again with pepper if desired.
