🍽️ Goat cheese with gooseberry sauce

Ingredients
- 250 gooseberries
- 250 g plums
- 2 shallots
- 1 mild, green chili pepper
- 125 ml white wine vinegar
- 1 tsp. mustard powder
- 50 g brown sugar
- salt
- cayenne pepper
- 4 small goat cheeses
- 2 tbsp. honey
- lemon thyme (for garnish)
Instructions
- 1. Wash the gooseberries and let them drain well.
- 2. Wash the plums, halve them, remove the pits, and cut them into quarters.
- 3. Peel the shallots and chop them roughly.
- 4. Wash the chili peppers, remove the stems, and slice them into rings.
- 5. Mix the vinegar with 100 milliliters of water, mustard powder, and sugar in a pot.
- 6. Bring the mixture to a boil.
- 7. Let the liquid simmer gently for about 10 minutes.
- 8. Add the fruit and shallots to the sauce.
- 9. Let everything simmer gently for another 10 to 15 minutes, stirring occasionally, until it thickens into a chutney.
- 10. Season the chutney with salt and cayenne pepper.
- 11. Remove the pot from the heat and let the chutney cool down.
- 12. Place the cheese slices on a baking tray lined with baking paper.
- 13. Drizzle the cheese with honey.
- 14. Preheat the oven grill.
- 15. Bake the cheese under the preheated grill for 5 to 10 minutes, until golden brown.
- 16. Serve the cheese with the cooled chutney.
- 17. Garnish the dish with thyme and serve.
