  1. 1. Peel the carrots.
  2. 2. Slice the carrots into long, thin strips using a vegetable peeler.
  3. 3. Bring water to a boil and add some salt and lemon juice.
  4. 4. Cook the carrot strips for 2 to 3 minutes.
  5. 5. Drain the carrots and let them dry well.
  6. 6. Let the carrots cool down completely.
  7. 7. Mix goat cheese, cream cheese, yogurt, and instant gelatin in a bowl.
  8. 8. Season the cheese mixture with a pinch of salt and pepper.
  9. 9. Line a small mold (18 cm diameter) or a baking dish with cling film.
  10. 10. Place a portion of the cheese mixture into the mold.
  11. 11. Distribute some of the cooled carrot strips on top.
  12. 12. Layer the remaining cheese mixture and carrots alternately.
  13. 13. Place the mold in the refrigerator for 2 to 3 hours.
  14. 14. Thoroughly rinse an untreated orange.
  15. 15. Zest the orange peel using a zester.
  16. 16. Squeeze both oranges.
  17. 17. Bring the orange juice and zest strips to a boil in a pot.
  18. 18. Mix cornstarch with grappa.
  19. 19. Stir the cornstarch-grappa mixture into the boiling orange juice to thicken it.
  20. 20. Remove the terrine from the mold.
  21. 21. Cut the terrine into pieces.
  22. 22. Serve the terrine with the carrot strips and orange sauce.
