🍽️ Goat Cheese Terrine with Carrots and Orange Dressing

Ingredients
- 2 carrots
- salt
- juice of 1 lemons
- 250 g goat cream cheese
- 250 g double cream cheese
- 100 g yogurt
- 4 tsp gelatin
- pepper from the mill
- 2 oranges
- 1 tsp cornstarch
- 2 tbsp grappa
Instructions
- 1. Peel the carrots.
- 2. Slice the carrots into long, thin strips using a vegetable peeler.
- 3. Bring water to a boil and add some salt and lemon juice.
- 4. Cook the carrot strips for 2 to 3 minutes.
- 5. Drain the carrots and let them dry well.
- 6. Let the carrots cool down completely.
- 7. Mix goat cheese, cream cheese, yogurt, and instant gelatin in a bowl.
- 8. Season the cheese mixture with a pinch of salt and pepper.
- 9. Line a small mold (18 cm diameter) or a baking dish with cling film.
- 10. Place a portion of the cheese mixture into the mold.
- 11. Distribute some of the cooled carrot strips on top.
- 12. Layer the remaining cheese mixture and carrots alternately.
- 13. Place the mold in the refrigerator for 2 to 3 hours.
- 14. Thoroughly rinse an untreated orange.
- 15. Zest the orange peel using a zester.
- 16. Squeeze both oranges.
- 17. Bring the orange juice and zest strips to a boil in a pot.
- 18. Mix cornstarch with grappa.
- 19. Stir the cornstarch-grappa mixture into the boiling orange juice to thicken it.
- 20. Remove the terrine from the mold.
- 21. Cut the terrine into pieces.
- 22. Serve the terrine with the carrot strips and orange sauce.
