🍰 Delicate Vanilla Crescents

Ingredients
- 1 vanilla pod
- 200 g spelt flour Type 630
- 100 g powdered sugar from raw cane sugar
- 80 g ground almonds (peeled)
- 1 pinch salt
- 150 g butter
- 50 g bourbon vanilla sugar
Instructions
- 1. Split the vanilla pod lengthwise.
- 2. Scrape out the seeds with a knife.
- 3. Sift the flour into a bowl.
- 4. Mix the flour with the vanilla seeds, 75 g of powdered sugar, the almonds, and a pinch of salt.
- 5. Add the butter in small pieces to the flour mixture.
- 6. Knead the ingredients quickly into a smooth dough.
- 7. Wrap the dough in cling film.
- 8. Place the dough in the refrigerator overnight.
- 9. Line two baking sheets with baking paper.
- 10. Divide the dough into small pieces.
- 11. Shape each piece into a roll.
- 12. Taper the ends of the rolls to a point.
- 13. Bend the rolls into a crescent shape.
- 14. Place the crescents on the baking sheet.
- 15. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
- 16. Bake the crescents for about 10 to 12 minutes.
- 17. Mix the vanilla sugar with the remaining powdered sugar.
- 18. Turn the still warm crescents upside down in the sugar mixture.
- 19. Remove the crescents.
- 20. Let them cool on a wire rack.
