  1. 1. Split the vanilla pod lengthwise.
  2. 2. Scrape out the seeds with a knife.
  3. 3. Sift the flour into a bowl.
  4. 4. Mix the flour with the vanilla seeds, 75 g of powdered sugar, the almonds, and a pinch of salt.
  5. 5. Add the butter in small pieces to the flour mixture.
  6. 6. Knead the ingredients quickly into a smooth dough.
  7. 7. Wrap the dough in cling film.
  8. 8. Place the dough in the refrigerator overnight.
  9. 9. Line two baking sheets with baking paper.
  10. 10. Divide the dough into small pieces.
  11. 11. Shape each piece into a roll.
  12. 12. Taper the ends of the rolls to a point.
  13. 13. Bend the rolls into a crescent shape.
  14. 14. Place the crescents on the baking sheet.
  15. 15. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
  16. 16. Bake the crescents for about 10 to 12 minutes.
  17. 17. Mix the vanilla sugar with the remaining powdered sugar.
  18. 18. Turn the still warm crescents upside down in the sugar mixture.
  19. 19. Remove the crescents.
  20. 20. Let them cool on a wire rack.
