🍽️ Crispy Zander Fillets with Creamy Kohlrabi

Ingredients
- 1 Kohlrabi
- 1 tbsp Butter
- 100 ml Vegetable broth
- Salt
- Pepper (from the mill)
- 320 g Zander fillet (kitchen-ready, with skin)
- Lemon juice
- Flour
- 2 tbsp Vegetable oil
- 2 Garlic cloves
- 80 ml dry white wine
- 80 ml Whipping cream
- 2 tbsp Chives
Instructions
- 1. Peel the kohlrabi and grate it coarsely.
- 2. Melt the butter in a pan and add the grated kohlrabi.
- 3. Sauté the vegetables briefly before pouring in the broth.
- 4. Let the mixture simmer on medium heat for five minutes.
- 5. Season the kohlrabi with salt and pepper at the end.
- 6. Rinse the zander fillets and pat them dry with a kitchen towel.
- 7. Divide the fish into four equal portions.
- 8. Make several shallow cuts into the skin side of the fillets.
- 9. Season the pieces with salt, pepper, and a splash of lemon juice.
- 10. Lightly coat the fillets in flour.
- 11. Heat oil in a hot pan and fry the zander pieces on the skin side until golden brown.
- 12. Turn the fillets and let them finish cooking on low heat.
- 13. Peel the garlic and crush the cloves flat.
- 14. Add the garlic to the pan and sauté it briefly.
- 15. Heat white wine and cream in a separate pot.
- 16. Season the sauce with salt and pepper.
- 17. Foam the sauce using a hand blender.
- 18. Taste the kohlrabi again and plate it.
- 19. Place one zander fillet on top of the kohlrabi.
- 20. Drizzle the dish with the white wine foam.
- 21. Garnish with chive rolls and serve immediately.
