  1. 1. Peel the kohlrabi and grate it coarsely.
  2. 2. Melt the butter in a pan and add the grated kohlrabi.
  3. 3. Sauté the vegetables briefly before pouring in the broth.
  4. 4. Let the mixture simmer on medium heat for five minutes.
  5. 5. Season the kohlrabi with salt and pepper at the end.
  6. 6. Rinse the zander fillets and pat them dry with a kitchen towel.
  7. 7. Divide the fish into four equal portions.
  8. 8. Make several shallow cuts into the skin side of the fillets.
  9. 9. Season the pieces with salt, pepper, and a splash of lemon juice.
  10. 10. Lightly coat the fillets in flour.
  11. 11. Heat oil in a hot pan and fry the zander pieces on the skin side until golden brown.
  12. 12. Turn the fillets and let them finish cooking on low heat.
  13. 13. Peel the garlic and crush the cloves flat.
  14. 14. Add the garlic to the pan and sauté it briefly.
  15. 15. Heat white wine and cream in a separate pot.
  16. 16. Season the sauce with salt and pepper.
  17. 17. Foam the sauce using a hand blender.
  18. 18. Taste the kohlrabi again and plate it.
  19. 19. Place one zander fillet on top of the kohlrabi.
  20. 20. Drizzle the dish with the white wine foam.
  21. 21. Garnish with chive rolls and serve immediately.
