🍽️ Zander Fillets with Wild Garlic Crust

Ingredients
- 4 zander fillets à approx. 180 g (skinless)
- salt
- pepper (from the mill)
- olive oil
- 1 handful wild garlic
- 2 tbsp pine nuts
- 100 g soft butter
- 4 tbsp breadcrumbs
Instructions
- 1. Switch the oven to the grill function and preheat it.
- 2. Rinse the zander fillets briefly under running water.
- 3. Pat the fillets completely dry with a kitchen towel.
- 4. Season the fillets on both sides with salt and pepper.
- 5. Heat two tablespoons of oil in a non-stick pan.
- 6. Fry the fillets gently for one to two minutes on each side.
- 7. Place the pre-fried fillets into a lightly oiled baking dish.
- 8. Wash the wild garlic and pat it dry.
- 9. Chop the wild garlic leaves into coarse pieces.
- 10. Put the wild garlic, pine nuts, and butter into a blender.
- 11. Blend the mixture into a fine paste.
- 12. Stir in as many crumbs as possible until it forms a spreadable paste.
- 13. Finally season the wild garlic paste with salt and pepper.
- 14. Spread the paste evenly over the fish fillets.
- 15. Smooth out the topping.
- 16. Broil the fillets under the grill for two to three minutes until golden brown.
