🍽️ Fried rice with zander fillet and peanuts

Ingredients
- 4 pieces Zander fillet (approx. 150 g each)
- 500 g cooked rice
- 2 shallots
- 2 garlic cloves
- 1 chili pepper
- 2 tbsp coarsely chopped parsley
- 4 tbsp peanut oil
- 4 tbsp chopped peanuts
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the zander under running water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Lightly score the skin of the fillet with a sharp knife.
- 4. Peel the shallots and the garlic.
- 5. Finely chop the shallots and the garlic.
- 6. Wash the chili pepper under running water.
- 7. Slice the chili pepper into rings.
- 8. Heat two tablespoons of oil in a pan.
- 9. Fry the shallots, garlic, and chili rings in the hot oil.
- 10. Add the rice to the pan.
- 11. Add two tablespoons of peanuts to the pan.
- 12. Fry the mixture for about four minutes while stirring constantly.
- 13. Add the parsley to the pan.
- 14. Season the rice with salt and pepper to taste.
- 15. Salt the zander fillet.
- 16. Pepper the zander fillet.
- 17. Heat the remaining oil in a separate pan.
- 18. Place the fish in the hot pan with the skin side down.
- 19. Fry the fish for about three minutes until golden brown.
- 20. Carefully turn the fish over.
- 21. Finish cooking the other side of the fish for about two minutes.
- 22. Divide the fried rice among small bowls.
- 23. Place a piece of zander fillet on top of the rice.
- 24. Sprinkle the dish with the remaining peanuts.
- 25. Serve the dish immediately.
