🍽️ Zander with Wasabi Turnip Vegetables

Ingredients
- 500 g rutabaga
- 1 leek stalk
- 3 tbsp oil
- 1 tsp wasabi paste
- 1 tbsp lime juice
- salt, pepper
- 2 zander fillets (200g each)
- 1 small red chili pepper
- 2 tbsp butter
Instructions
- 1. Peel the turnips.
- 2. Cut the turnips into thin strips.
- 3. Slice the leeks lengthwise.
- 4. Rinse the leeks.
- 5. Cut the leeks into thin strips as well.
- 6. Heat 2 tablespoons of oil in a non-stick pan.
- 7. Stew the turnip strips in it for 15 minutes.
- 8. Mix the wasabi paste with lime juice.
- 9. Add the leeks to the turnips in the last 4 to 5 minutes.
- 10. Stir the wasabi-lime mixture into the vegetables.
- 11. Season the vegetables with salt and pepper.
- 12. Rinse the zander fillets.
- 13. Pat the fillets dry.
- 14. Cut the zander fillets into 4 portions.
- 15. Finely chop the chili pepper.
- 16. Heat the remaining oil in a pan.
- 17. Fry the zander fillets skin-side down for 3 minutes.
- 18. Add the chili peppers to the pan.
- 19. Turn the zander fillets.
- 20. Add the butter to the pan.
- 21. Remove the pan from the heat.
- 22. Let the zander cook for another 2 to 3 minutes.
- 23. Plate the zander with the chili butter.
- 24. Serve the zander together with the turnip vegetables.
- 25. Serve with a long-grain wild rice mix.
