🍽️ Pan-fried Zander with Porcini Mushrooms

Ingredients
- 4 Zander fillets (approx. 220 g each)
- 200 g Porcini mushrooms
- 3 tbsp Butter
- 1 sprig Rosemary
- 50 ml White wine
- Salt
- Pepper (from the mill)
- 1 tbsp Parsley
Instructions
- 1. Rinse the zander fillets under cold water. Remove any bones using tweezers. Pat the fish completely dry with kitchen paper. Cut the fillets in half if desired.
- 2. Clean the porcini mushrooms thoroughly. Slice them into thick slices so they do not become too thin.
- 3. Heat butter in a large, non-stick pan. Place the zander fillets skin-side down in the pan. Fry the fish on medium heat for about four minutes until golden brown.
- 4. Season the fish with salt and pepper. Gently turn the fillets over to the other side.
- 5. Add the sliced porcini mushrooms to the pan. Fry the mushrooms and fish together for another three to four minutes.
- 6. Turn the mushrooms once. Season them with salt and pepper as well.
- 7. Deglaze the pan with white wine. Let the liquid reduce briefly until it has slightly thickened.
- 8. Finely chop the parsley and add it to the pan. Season the dish to taste with salt and pepper.
- 9. Warm the serving plates. Plate the zander with the mushrooms on the warm plates and serve the dish immediately.
