  1. 1. Rinse the zander fillets under cold water. Remove any bones using tweezers. Pat the fish completely dry with kitchen paper. Cut the fillets in half if desired.
  2. 2. Clean the porcini mushrooms thoroughly. Slice them into thick slices so they do not become too thin.
  3. 3. Heat butter in a large, non-stick pan. Place the zander fillets skin-side down in the pan. Fry the fish on medium heat for about four minutes until golden brown.
  4. 4. Season the fish with salt and pepper. Gently turn the fillets over to the other side.
  5. 5. Add the sliced porcini mushrooms to the pan. Fry the mushrooms and fish together for another three to four minutes.
  6. 6. Turn the mushrooms once. Season them with salt and pepper as well.
  7. 7. Deglaze the pan with white wine. Let the liquid reduce briefly until it has slightly thickened.
  8. 8. Finely chop the parsley and add it to the pan. Season the dish to taste with salt and pepper.
  9. 9. Warm the serving plates. Plate the zander with the mushrooms on the warm plates and serve the dish immediately.
