  1. 1. Remove the seeds and white pith from the bell peppers.
  2. 2. Rinse the bell peppers under running water.
  3. 3. Dice the bell peppers into small cubes.
  4. 4. Dice the melon into small cubes as well.
  5. 5. Rinse the limes thoroughly.
  6. 6. Finely grate the zest of one lime.
  7. 7. Squeeze the juice from this lime.
  8. 8. Cut the second lime into wedges.
  9. 9. Heat the oil in a frying pan.
  10. 10. Sear the diced peppers, melon cubes, and lime wedges in it for a very short time.
  11. 11. Remove the mixture from the pan and set it aside.
  12. 12. Stir the lime juice and lime zest into the mixture.
  13. 13. Season the salsa with a little salt and pepper.
  14. 14. Finely chop the tarragon leaves.
  15. 15. Stir the chopped tarragon into the salsa.
  16. 16. Cut the zander fillet into suitable portion sizes.
  17. 17. Pat the fish pieces dry with kitchen paper.
  18. 18. Season the fish with salt and pepper.
  19. 19. Heat the butter in a frying pan.
  20. 20. Fry the zander fillets for about two to three minutes on each side until golden brown.
  21. 21. Serve the fried zander together with the papaya-melon salsa.
