🍽️ Pan-fried Zander with Fresh Papaya-Melon Salsa

Ingredients
- 2 red bell peppers
- 0.5 small Galia melon (approx. 200 g)
- 2 limes
- 2 tbsp oil
- salt
- pepper
- 4 sprigs tarragon
- 500 g zander fillet
- 2 tbsp butter
- lime wedges (for garnish)
Instructions
- 1. Remove the seeds and white pith from the bell peppers.
- 2. Rinse the bell peppers under running water.
- 3. Dice the bell peppers into small cubes.
- 4. Dice the melon into small cubes as well.
- 5. Rinse the limes thoroughly.
- 6. Finely grate the zest of one lime.
- 7. Squeeze the juice from this lime.
- 8. Cut the second lime into wedges.
- 9. Heat the oil in a frying pan.
- 10. Sear the diced peppers, melon cubes, and lime wedges in it for a very short time.
- 11. Remove the mixture from the pan and set it aside.
- 12. Stir the lime juice and lime zest into the mixture.
- 13. Season the salsa with a little salt and pepper.
- 14. Finely chop the tarragon leaves.
- 15. Stir the chopped tarragon into the salsa.
- 16. Cut the zander fillet into suitable portion sizes.
- 17. Pat the fish pieces dry with kitchen paper.
- 18. Season the fish with salt and pepper.
- 19. Heat the butter in a frying pan.
- 20. Fry the zander fillets for about two to three minutes on each side until golden brown.
- 21. Serve the fried zander together with the papaya-melon salsa.
