🍽️ Crispy Spinach Triangles Made with Yufka Pastry

Ingredients
- 300 g spinach
- salt
- 1 onion
- 1 clove of garlic
- 80 g melted butter
- 180 g feta cheese
- 1 egg
- pepper
- 250 g filo pastry
Instructions
- 1. Wash the spinach thoroughly and remove any tough stems.
- 2. Blanch the spinach by briefly cooking it in boiling water.
- 3. Remove the spinach from the water, rinse it with cold water, and squeeze it thoroughly to remove excess liquid.
- 4. Roughly chop the squeezed spinach and place it in a bowl.
- 5. Peel the onion and garlic and chop both finely.
- 6. Heat one tablespoon of butter in a pan and sauté the onions and garlic for two to three minutes until translucent and soft.
- 7. Let the onion mixture cool down and then add it to the spinach in the bowl.
- 8. Cut the feta cheese into small cubes and add them to the filling along with the egg.
- 9. Mix all the filling ingredients together thoroughly.
- 10. Season the filling to taste with salt and pepper.
- 11. Preheat the oven to 200 degrees Celsius with fan setting.
- 12. Cut the yufka pastry into strips measuring approximately 7 by 22 centimeters.
- 13. Place about one tablespoon of the filling on the bottom end of a pastry strip.
- 14. Fold one of the bottom corners of the strip towards the side edge to create a small triangle that encloses the filling.
- 15. Continue folding the triangle upwards until the entire strip is wrapped into a multi-layered triangle.
- 16. Brush the end of the triangle with some butter and press it down slightly to seal it.
- 17. Repeat this process with the remaining pastry strips.
- 18. Place the finished triangles on a baking sheet lined with baking paper.
- 19. Brush the tops of the triangles with the remaining butter.
- 20. Bake the triangles in the hot oven for 15 to 20 minutes until golden brown.
- 21. Remove the triangles from the oven and serve them warm or after they have cooled down.
- 22. Serve olives as a side dish, for example.
