  1. 1. Wash the spinach thoroughly and remove any tough stems.
  2. 2. Blanch the spinach by briefly cooking it in boiling water.
  3. 3. Remove the spinach from the water, rinse it with cold water, and squeeze it thoroughly to remove excess liquid.
  4. 4. Roughly chop the squeezed spinach and place it in a bowl.
  5. 5. Peel the onion and garlic and chop both finely.
  6. 6. Heat one tablespoon of butter in a pan and sauté the onions and garlic for two to three minutes until translucent and soft.
  7. 7. Let the onion mixture cool down and then add it to the spinach in the bowl.
  8. 8. Cut the feta cheese into small cubes and add them to the filling along with the egg.
  9. 9. Mix all the filling ingredients together thoroughly.
  10. 10. Season the filling to taste with salt and pepper.
  11. 11. Preheat the oven to 200 degrees Celsius with fan setting.
  12. 12. Cut the yufka pastry into strips measuring approximately 7 by 22 centimeters.
  13. 13. Place about one tablespoon of the filling on the bottom end of a pastry strip.
  14. 14. Fold one of the bottom corners of the strip towards the side edge to create a small triangle that encloses the filling.
  15. 15. Continue folding the triangle upwards until the entire strip is wrapped into a multi-layered triangle.
  16. 16. Brush the end of the triangle with some butter and press it down slightly to seal it.
  17. 17. Repeat this process with the remaining pastry strips.
  18. 18. Place the finished triangles on a baking sheet lined with baking paper.
  19. 19. Brush the tops of the triangles with the remaining butter.
  20. 20. Bake the triangles in the hot oven for 15 to 20 minutes until golden brown.
  21. 21. Remove the triangles from the oven and serve them warm or after they have cooled down.
  22. 22. Serve olives as a side dish, for example.
