🍰 Crispy Spinach and Cheese Pie with Yufka Pastry

Ingredients
- 500 g spinach
- 1 garlic clove
- 1 onion
- 5 tbsp oil
- 200 g feta cheese
- 200 g sour cream
- 1 egg
- salt
- pepper
- 400 g filo dough (filo dough sheets)
Instructions
- 1. Wash the spinach thoroughly and let it drain well.
- 2. Peel the garlic cloves and the onion.
- 3. Finely chop the garlic and the onion.
- 4. Heat some oil in a pan.
- 5. Sauté the garlic and onion in the hot oil.
- 6. Add the drained spinach to the pan.
- 7. Cook the spinach until it has wilted.
- 8. Let the spinach mixture drain well.
- 9. Let the spinach mixture cool down a bit.
- 10. Finely chop the cooled spinach mixture.
- 11. Grate the cheese finely.
- 12. Fold the grated cheese into the spinach mixture.
- 13. Place one Yufka pastry sheet on a baking tray lined with baking paper.
- 14. Place a second Yufka pastry sheet directly on top of the first one.
- 15. Spread the spinach and cheese mixture evenly over the pastry.
- 16. Mix the sour cream with the egg.
- 17. Season the cream and egg mixture with salt and pepper.
- 18. Pour the cream and egg mixture over the spinach and cheese layer.
- 19. Place the remaining Yufka pastry sheets loosely on top of the dish.
- 20. Push the corners of the top pastry sheets together or fold them over.
- 21. Brush the edges of the pastry with some water.
- 22. Heat the remaining oil in a small pan.
- 23. Brush the surface of the pastry with the hot oil.
- 24. Preheat the oven to 200 degrees Celsius.
- 25. Bake the pie for about 20 to 30 minutes until golden brown.
- 26. Cut the hot pie into portions.
- 27. Serve the pie immediately while hot.
