  1. 1. Wash the spinach thoroughly and let it drain well.
  2. 2. Peel the garlic cloves and the onion.
  3. 3. Finely chop the garlic and the onion.
  4. 4. Heat some oil in a pan.
  5. 5. Sauté the garlic and onion in the hot oil.
  6. 6. Add the drained spinach to the pan.
  7. 7. Cook the spinach until it has wilted.
  8. 8. Let the spinach mixture drain well.
  9. 9. Let the spinach mixture cool down a bit.
  10. 10. Finely chop the cooled spinach mixture.
  11. 11. Grate the cheese finely.
  12. 12. Fold the grated cheese into the spinach mixture.
  13. 13. Place one Yufka pastry sheet on a baking tray lined with baking paper.
  14. 14. Place a second Yufka pastry sheet directly on top of the first one.
  15. 15. Spread the spinach and cheese mixture evenly over the pastry.
  16. 16. Mix the sour cream with the egg.
  17. 17. Season the cream and egg mixture with salt and pepper.
  18. 18. Pour the cream and egg mixture over the spinach and cheese layer.
  19. 19. Place the remaining Yufka pastry sheets loosely on top of the dish.
  20. 20. Push the corners of the top pastry sheets together or fold them over.
  21. 21. Brush the edges of the pastry with some water.
  22. 22. Heat the remaining oil in a small pan.
  23. 23. Brush the surface of the pastry with the hot oil.
  24. 24. Preheat the oven to 200 degrees Celsius.
  25. 25. Bake the pie for about 20 to 30 minutes until golden brown.
  26. 26. Cut the hot pie into portions.
  27. 27. Serve the pie immediately while hot.
