  2. 2. Peel the carrots, parsnips, and parsley roots.
  3. 3. Cut the vegetables in half or into quarters lengthwise, depending on their size.
  4. 4. Toss the vegetables in a bowl with salt, pepper, lemon juice, olive oil, and honey.
  5. 5. Place the vegetables in an ovenproof dish.
  6. 6. Place the dish in the preheated oven and bake the vegetables for about 30 minutes.
  7. 7. Turn the vegetables occasionally during the cooking time.
  8. 8. Drizzle the vegetables with a little broth if they seem too dry.
  9. 9. Wash the parsley and shake it dry.
  10. 10. Finely chop the parsley leaves.
  11. 11. Stir the chopped parsley into the finished vegetables.
