🍽️ Honey-glazed root vegetables

Ingredients
- 400 g carrots
- 200 g parsnips
- 200 g parsley root
- salt
- white pepper
- 2 tbsp lemon juice
- 3 tbsp olive oil
- 1 tbsp liquid honey
- 50 ml vegetable broth (as needed)
- 0.5 bunch parsley
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Peel the carrots, parsnips, and parsley roots.
- 3. Cut the vegetables in half or into quarters lengthwise, depending on their size.
- 4. Toss the vegetables in a bowl with salt, pepper, lemon juice, olive oil, and honey.
- 5. Place the vegetables in an ovenproof dish.
- 6. Place the dish in the preheated oven and bake the vegetables for about 30 minutes.
- 7. Turn the vegetables occasionally during the cooking time.
- 8. Drizzle the vegetables with a little broth if they seem too dry.
- 9. Wash the parsley and shake it dry.
- 10. Finely chop the parsley leaves.
- 11. Stir the chopped parsley into the finished vegetables.
