🍽️ Crispy Sausage Cutlets on Creamy Pea and Potato Mash

Ingredients
- 350 g starchy potatoes
- salt
- 150 g peas (frozen)
- 4 tbsp flour (Type 1050)
- 1 egg
- 60 ml mineral water
- pepper
- 150 g meat sausage
- 1 tbsp rapeseed oil
- 2 tbsp milk (1.5% fat)
- nutmeg
Instructions
- 1. Wash the potatoes thoroughly and peel them.
- 2. Cut the peeled potatoes into roughly equal-sized pieces.
- 3. Place the potato pieces into a pot.
- 4. Pour 100 milliliters of water and a pinch of salt over the potatoes.
- 5. Bring the water with the potatoes to a boil.
- 6. Reduce the heat to a low setting.
- 7. Cover the pot with a lid.
- 8. Let the potatoes cook on low heat for about 20 minutes.
- 9. After 10 minutes of cooking time, add the frozen peas directly into the pot.
- 10. Let the peas cook together with the potatoes in the pot.
- 11. In the meantime, get a bowl.
- 12. Add two tablespoons of flour to the bowl.
- 13. Crack an egg into the bowl with the flour.
- 14. Pour the sparkling water over the other ingredients.
- 15. Whisk everything together with a whisk until you have a smooth batter.
- 16. Season the batter with salt and pepper.
- 17. Slice the meat sausage into slices about half a centimeter thick.
- 18. Place the remaining flour onto a plate.
- 19. Coat each sausage slice thoroughly in the flour on the plate.
- 20. Heat one tablespoon of oil in a large non-stick frying pan.
- 21. Dip the floured sausage slices one by one into the batter.
- 22. Place the dipped sausage slices immediately into the hot oil.
- 23. Fry the sausage cutlets until golden brown on both sides.
- 24. Pour the milk into the pot with the potato and pea mixture.
- 25. Mash everything into a fine puree using a potato masher.
- 26. Finally, season the puree with salt and pepper.
- 27. Grate some fresh nutmeg over the puree.
- 28. Serve the green puree together with the crispy sausage cutlets.
