🍽️ Fresh Sausage and Cucumber Salad with Lime Dressing

Ingredients
- 400 g meat sausage
- 1 cucumber
- 4 spring onions
- 2 tomatoes
- 1 unpeeled lime
- 4 tbsp mayonnaise
- 4 tbsp yogurt
- salt
- cayenne pepper
Instructions
- 1. Peel the skin off the cooked pork sausage.
- 2. Slice the sausage into thin rounds.
- 3. Cut the sausage slices into thin strips.
- 4. Wash the cucumber thoroughly.
- 5. Cut the cucumber in half lengthwise.
- 6. Remove the seeds from the cucumber halves.
- 7. Dice the cucumber flesh into small cubes.
- 8. Wash the spring onions.
- 9. Trim the dry ends of the spring onions.
- 10. Slice the spring onions diagonally into thin rings.
- 11. Wash the tomatoes.
- 12. Cut the tomatoes into quarters.
- 13. Remove the core from the tomato quarters.
- 14. Dice the tomato flesh into small cubes.
- 15. Finely grate the zest of the lime.
- 16. Squeeze the juice out of the lime.
- 17. Mix the lime zest with the mayonnaise.
- 18. Stir the yogurt into the mayonnaise mixture.
- 19. Stir until the sauce is creamy and smooth.
- 20. Add the lime juice to the sauce.
- 21. Season the sauce with salt.
- 22. Season the sauce with cayenne pepper.
- 23. Toss the finished sauce with the sausage, cucumber, and tomatoes.
- 24. Taste the salad one last time and adjust seasoning if needed.
- 25. Serve the salad.
- 26. Serve toast bread on the side.
