Ingredients
- 400 g meat sausage
- 200 g bread dumplings (from the day before)
- 1 tart apple
- 1 tbsp lemon juice
- 100 g radish
- 1 large red onion
- 3 tbsp wine vinegar
- 5 tbsp vegetable oil
- salt
- pepper (from the mill)
- chive rolls (for decoration)
- chive stems (for decoration)
Instructions
- 1. Slice the meat sausage into thin rounds.
- 2. Slice the bread dumplings into thin rounds as well.
- 3. Wash the apple thoroughly.
- 4. Cut the apple into four quarters.
- 5. Remove the core from the apple quarters.
- 6. Slice the apple pieces thinly across the grain.
- 7. Drizzle the apple slices immediately with lemon juice to prevent browning.
- 8. Peel the horseradish root.
- 9. Use a vegetable peeler to shave thin strips from the horseradish.
- 10. Peel the onion.
- 11. Cut the onion into thin rings.
- 12. Mix the vinegar with the oil to make the vinaigrette.
- 13. Season the vinaigrette with salt and pepper.
- 14. Toss the sausage and dumpling slices with the apple, onion, horseradish, and vinaigrette.
- 15. Let the salad marinate for about 20 minutes.
- 16. Divide the salad onto plates.
- 17. Sprinkle fresh chives over the salad.
- 18. Serve the salad garnished.
