🍽️ Classic Sausage Salad with Pickles

Ingredients
- 200 g bologna sausage
- 1 red onion
- salt
- pepper (from the mill)
- 2 pickles
- 6 tbsp vinegar
- 2 tbsp pickle brine
- 4 tbsp vegetable broth
- 1 tbsp olive oil
- 4 radishes
- 2 tbsp chive rings
Instructions
- 1. Slice the sausage into thin rounds.
- 2. Arrange the sausage slices on a large platter.
- 3. Peel the onion.
- 4. Cut the onion into very thin rings.
- 5. Distribute the onion rings evenly over the sausage.
- 6. Season the salad with a pinch of salt and black pepper.
- 7. Slice the gherkins (pickles) into thin rounds.
- 8. Place the pickle slices on top of the sausage salad.
- 9. Whisk together vinegar, pickle juice, broth, and oil in a small bowl.
- 10. Pour the dressing mixture evenly over the salad.
- 11. Cover the platter and let the salad marinate for 30 minutes.
- 12. Wash the radishes under running water.
- 13. Remove the tough stems and the root end of the radishes.
- 14. Dice the radishes into very small cubes.
- 15. Chop the chives into fine rings.
- 16. Garnish the salad with the radish cubes and chives just before serving.
