🍲 Hearty Sausage and Vegetable Stew

Ingredients
- 200 g firm-boiling potatoes
- 200 g celeriac
- 200 g carrots
- 200 g swede
- 200 g white cabbage
- 1 onion
- 2 tbsp vegetable oil
- 200 g strained tomatoes
- 1400 ml vegetable broth
- 300 g sausages (e.g. Cabanossi)
- salt
- pepper (from the mill)
- 0.5 tsp caraway seeds
- 2 tbsp chive rings
Instructions
- 1. Peel the potatoes, celery, carrots, and turnips.
- 2. Thoroughly wash the peeled vegetables.
- 3. Cut the vegetables into thin strips or batons.
- 4. Remove the tough cores from the cabbage.
- 5. Wash the cabbage and cut it into fine strips as well.
- 6. Peel the onion and chop it finely.
- 7. Heat some oil in a large pot.
- 8. Add the chopped onion to the hot oil.
- 9. Sauté the onion until translucent and soft.
- 10. Add the prepared vegetables to the pot with the onion.
- 11. Sauté the vegetables briefly to soften them slightly.
- 12. Deglaze the vegetables with the broth.
- 13. Stir the puréed tomatoes into the liquid.
- 14. Let the stew simmer on medium heat for about 20 minutes.
- 15. Slice the sausage into thick rounds.
- 16. Add the sausage slices to the pot 10 minutes before the cooking time ends.
- 17. Season the stew with salt, pepper, and cumin.
- 18. Taste the seasoning and adjust to your liking.
- 19. Sprinkle the finished dish with fine chive rings.
- 20. Serve the stew hot.
