  1. 1. Rinse the fresh herbs under cold water.
  2. 2. Dry the herbs thoroughly with kitchen paper.
  3. 3. Pluck the leaves or needles from the stems.
  4. 4. Chop the herbs finely.
  5. 5. Add half of the salt and the chopped herbs to a mortar.
  6. 6. Pound the mixture until fine.
  7. 7. Wash the chili pepper thoroughly.
  8. 8. Remove the stem base of the chili.
  9. 9. Cut the chili lengthwise.
  10. 10. Scrape out the seeds with a spoon.
  11. 11. Finely chop the chili flesh.
  12. 12. Add the chopped chili flesh to the herb salt mixture.
  13. 13. Add the remaining salt.
  14. 14. Add the lemon zest.
  15. 15. Transfer the finished seasoning mixture into a screw-top jar.
  16. 16. Enjoy the salt with fried fish.
