🍽️ Spicy Beef Tartare with Fried Egg

Ingredients
- 1 small shallot
- 3 small capers
- 2 egg yolks
- 3 tbsp extra virgin olive oil
- 1.5 tsp Dijon mustard
- 2 tbsp Worcestershire sauce
- salt
- pepper
- 400 g beef fillet (have the butcher grind it finely)
- 1 tsp ketchup
- a little Tabasco
- 15 g butter
- 8 quail eggs
Instructions
- 1. Peel the shallot.
- 2. Dice the shallot very finely.
- 3. Remove the hard stems from the capers.
- 4. Finely chop the capers.
- 5. Place the egg yolk in a bowl.
- 6. Add oil, mustard, Worcestershire sauce, salt, and pepper.
- 7. Whisk the ingredients vigorously with a fork.
- 8. Add the beef mince (tartare) to the sauce.
- 9. Add the chopped capers.
- 10. Add the diced shallot.
- 11. Add ketchup.
- 12. Knead everything well until it forms a homogeneous mass.
- 13. Taste the mixture and add Tabasco if needed.
- 14. Shape the tartare into small balls or mounds.
- 15. Place the tartare balls on eight spoons or small plates.
- 16. Put the butter in a pan.
- 17. Melt the butter over very low heat.
- 18. Remove the pan from the heat briefly.
- 19. Carefully crack the quail eggs.
- 20. Place the eggs directly into the warm butter.
- 21. Place the pan back on the stove.
- 22. Fry the eggs over medium heat until the whites are set.
- 23. Place one fried egg on each portion of tartare.
- 24. Sprinkle the eggs with a little salt and pepper.
