🍽️ Aromatic Chicken with Mashed Potatoes, Tomatoes, and Garlic

Ingredients
- 600 g starchy potatoes
- Salt
- 1 Chicken (ready for cooking, approx. 1.4 kg)
- Pepper (from the mill)
- 100 g Turkey bacon (sliced)
- 2 Onions
- 0.5 Garlic bulb
- 200 ml dry white wine
- 250 ml poultry stock
- 2 sprigs Rosemary
- 8 Tomatoes
- 2 tbsp Butter
- 150 ml lukewarm milk
- Nutmeg (freshly grated)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in boiling salted water.
- 3. Cook the potatoes for about 30 minutes until tender.
- 4. Wash the chicken and pat it dry with a kitchen towel.
- 5. Cut the chicken into 8 equal pieces.
- 6. Season the meat pieces with salt and pepper.
- 7. Cut the bacon into thin strips.
- 8. Heat a pan and render the bacon in it without adding extra fat.
- 9. Fry the chicken pieces in the bacon fat until golden brown on all sides.
- 10. Peel the onions and dice them finely.
- 11. Crush the garlic cloves.
- 12. Add the onions and garlic to the chicken in the pan.
- 13. Sauté the vegetables briefly until fragrant.
- 14. Add the rosemary to the pan.
- 15. Deglaze the mixture with the wine.
- 16. Pour in the broth.
- 17. Season the sauce again with salt and pepper.
- 18. Simmer the chicken over medium heat for about 45 minutes.
- 19. Wash the tomatoes and halve them.
- 20. Remove the seeds from the tomatoes.
- 21. Dice the tomatoes finely.
- 22. Add the tomatoes to the meat about 15 minutes before the end of the cooking time.
- 23. Drain the cooked potatoes.
- 24. Let the potatoes steam dry for a moment.
- 25. Press the potatoes through a potato ricer.
- 26. Mix the potatoes with the butter and milk to form a smooth mash.
- 27. Season the mash with salt, pepper, and nutmeg.
- 28. Taste the chicken sauce one last time and adjust seasoning if needed.
- 29. Warm the plates.
- 30. Plate the chicken with the sauce and the mashed potatoes.
- 31. Serve the dish immediately.
