  1. 1. Peel the mangoes and carefully cut the flesh away from the pit.
  2. 2. Dice the mango flesh into small cubes.
  3. 3. Drizzle the mango cubes with lemon juice.
  4. 4. Peel the onion, garlic, and ginger.
  5. 5. Chop the onion, garlic, and ginger very finely.
  6. 6. Wash the chilies thoroughly.
  7. 7. Remove the seeds from the chilies.
  8. 8. Cut the deseeded chilies into small pieces.
  9. 9. Place the sugar and one tablespoon of water in a pot.
  10. 10. Heat the mixture and bring it to a boil.
  11. 11. Add the chopped onion, garlic, ginger, and chilies to the pot.
  12. 12. Sauté the ingredients over low heat for five minutes.
  13. 13. Add the mango cubes.
  14. 14. Simmer the chutney for another five minutes.
  15. 15. Crush the spices with a pinch of salt finely in a mortar.
  16. 16. Stir the crushed spices into the chutney.
  17. 17. Stir in the vinegar and bring the mixture to a boil.
  18. 18. Taste the chutney to finish seasoning.
  19. 19. Fill the chutney into clean jars.
  20. 20. Seal the jars tightly.
  21. 21. Store the chutney in a cool, dark place.
