🍽️ Spicy Mango Chutney

Ingredients
- 2 mangoes
- 1 tbsp lemon juice
- 1 onion
- 4 garlic cloves
- 1 piece ginger (approx 3 cm)
- 2 red chili peppers
- 150 g sugar
- 1 tsp peppercorns
- 1 tsp allspice berries
- 1 tsp coriander seeds
- salt
- 2 tbsp white wine vinegar
Instructions
- 1. Peel the mangoes and carefully cut the flesh away from the pit.
- 2. Dice the mango flesh into small cubes.
- 3. Drizzle the mango cubes with lemon juice.
- 4. Peel the onion, garlic, and ginger.
- 5. Chop the onion, garlic, and ginger very finely.
- 6. Wash the chilies thoroughly.
- 7. Remove the seeds from the chilies.
- 8. Cut the deseeded chilies into small pieces.
- 9. Place the sugar and one tablespoon of water in a pot.
- 10. Heat the mixture and bring it to a boil.
- 11. Add the chopped onion, garlic, ginger, and chilies to the pot.
- 12. Sauté the ingredients over low heat for five minutes.
- 13. Add the mango cubes.
- 14. Simmer the chutney for another five minutes.
- 15. Crush the spices with a pinch of salt finely in a mortar.
- 16. Stir the crushed spices into the chutney.
- 17. Stir in the vinegar and bring the mixture to a boil.
- 18. Taste the chutney to finish seasoning.
- 19. Fill the chutney into clean jars.
- 20. Seal the jars tightly.
- 21. Store the chutney in a cool, dark place.
