🍽️ Namibian Beef Casserole with Fruit

Ingredients
- 1 rolls
- 250 ml milk
- 1 kg beef (coarsely minced)
- 1 onion (peeled and chopped)
- 1 garlic clove (chopped)
- 100 g sultanas
- 100 g almond kernels (whole)
- 1 tbsp apricot jam
- 2 tbsp mango chutney
- 25 ml lemon juice
- 1 tbsp curry powder
- 1 tbsp cardamom
- salt
- pepper (from the mill)
- 2 tbsp olive oil
- 2 eggs
- 2 bay leaves
- 0.5 mango
- 1 banana
Instructions
- 1. Soak the bread rolls in half of the milk.
- 2. Squeeze out the bread rolls and add them to the minced meat.
- 3. Heat the oil in a pan.
- 4. Sauté the onion and garlic in it.
- 5. Add the meat and bread mixture to the pan.
- 6. Cook the mixture slowly for about 10 minutes while stirring until it is crumbly.
- 7. Stir the curry into the meat mixture.
- 8. Mix the mixture with sultanas, almonds, apricot jam, chutney, lemon juice, and cardamom.
- 9. Remove the pan from the heat.
- 10. Season the filling with salt and pepper.
- 11. Transfer the meat mixture into a baking dish or 4 to 6 smaller dishes.
- 12. Peel the mango and cut it into slices.
- 13. Peel the banana and cut it diagonally into thick slices.
- 14. Place the fruit pieces on top of the meat mixture.
- 15. Press the fruit slightly into the filling.
- 16. Mix the eggs with the remaining milk.
- 17. Pour the egg and milk mixture over the casserole.
- 18. Place the bay leaves on top.
- 19. Preheat the oven to 180°C top/bottom heat.
- 20. Bake the casserole for about 25 to 30 minutes until golden brown.
