🍽️ Spicy Rice with Vegetables

Ingredients
- 150 g peas (frozen)
- 2 carrots
- 1 onion
- 1 garlic clove
- 2 tbsp butter
- 0.5 cinnamon stick
- 2 cloves
- 1 cardamom pod
- 300 g basmati rice
- 3 tbsp lime juice
- 600 ml vegetable broth
- 1 handful young spinach leaves
- salt
Instructions
- 1. Let the peas thaw.
- 2. Peel the carrots and cut them into small cubes.
- 3. Peel the onion and the garlic clove.
- 4. Finely dice the onion and the garlic.
- 5. Heat the butter in a pot.
- 6. Sauté the onion and garlic until translucent over low heat.
- 7. Add the cinnamon stick, cloves, and cardamom to the rice.
- 8. Stir everything together and let it sweat for another 1 to 2 minutes.
- 9. Deglaze the pan with 1 to 2 tablespoons of lime juice.
- 10. Pour in the vegetable broth.
- 11. Stir in the carrots.
- 12. Simmer the rice covered over low heat for about 20 minutes.
- 13. Add the peas about 5 minutes before the end of the cooking time.
- 14. Clean the spinach.
- 15. Wash the spinach thoroughly.
- 16. Let the spinach drain well.
- 17. Fold the spinach leaves into the rice shortly before serving.
- 18. Season the dish with salt and lime juice.
- 19. Serve the rice.
