  1. 1. Let the peas thaw.
  2. 2. Peel the carrots and cut them into small cubes.
  3. 3. Peel the onion and the garlic clove.
  4. 4. Finely dice the onion and the garlic.
  5. 5. Heat the butter in a pot.
  6. 6. Sauté the onion and garlic until translucent over low heat.
  7. 7. Add the cinnamon stick, cloves, and cardamom to the rice.
  8. 8. Stir everything together and let it sweat for another 1 to 2 minutes.
  9. 9. Deglaze the pan with 1 to 2 tablespoons of lime juice.
  10. 10. Pour in the vegetable broth.
  11. 11. Stir in the carrots.
  12. 12. Simmer the rice covered over low heat for about 20 minutes.
  13. 13. Add the peas about 5 minutes before the end of the cooking time.
  14. 14. Clean the spinach.
  15. 15. Wash the spinach thoroughly.
  16. 16. Let the spinach drain well.
  17. 17. Fold the spinach leaves into the rice shortly before serving.
  18. 18. Season the dish with salt and lime juice.
  19. 19. Serve the rice.
