🍽️ Spicy Grilled Fish

Ingredients
- 600 g Sea Bass (2 Sea Bass; ready for cooking)
- 4 Garlic cloves
- 2 Chili peppers
- 1 tbsp Grated lemon zest
- 2 Fresh bay leaves
- Olive oil (for brushing)
- Salt
- Pepper (from the mill)
Instructions
- 1. Rinse the fish thoroughly.
- 2. Pat the fish dry with a kitchen towel.
- 3. Use a sharp knife to make about eight diagonal cuts into the fish skin on each side.
- 4. Peel the garlic cloves.
- 5. Finely chop the garlic.
- 6. Wash the chili peppers under running water.
- 7. Remove the stems from the chili peppers.
- 8. Halve the chili peppers lengthwise.
- 9. Finely chop the chili peppers.
- 10. Cut the bay leaves into thin strips.
- 11. Brush the fish with oil.
- 12. Season the fish with salt.
- 13. Season the fish with pepper.
- 14. Rub the finely chopped garlic onto the fish.
- 15. Oil the grill grate.
- 16. Place the fish on the oiled grill grate.
- 17. Grill the fish over low heat.
- 18. Grill the fish from the first side for about four to five minutes.
- 19. Turn the fish over.
- 20. Grill the fish from the second side for about four to five minutes.
- 21. Check if the fish are cooked by trying to pull out a fin easily.
- 22. Serve the fish on banana leaves.
- 23. Mix the chili peppers with the lemon zest.
- 24. Spread the mixture of chili and lemon zest along with the bay leaf strips over the fish.
