🍽️ Spicy Cauliflower Salad

Ingredients
- 1.2 kg cauliflower
- salt
- 100 ml olive oil
- 2 garlic cloves
- 100 ml dry white wine
- 2 tbsp lemon juice
- 1 tbsp honey
- 3 anchovies
- 1 tbsp ground almond kernels
- 100 g caper berries
- anchovies (rolled with capers)
Instructions
- 1. Rinse the cauliflower under running water.
- 2. Separate the cauliflower into individual florets.
- 3. Place the florets in a steamer insert.
- 4. Lightly salt the cauliflower.
- 5. Drizzle one tablespoon of oil over it.
- 6. Steam the cauliflower for about six minutes until it is still slightly crisp.
- 7. Peel the garlic clove while the cauliflower steams.
- 8. Press the garlic into a frying pan.
- 9. Add the wine, lemon juice, honey, and anchovies (small salted sardines) to the pan.
- 10. Heat the mixture while stirring.
- 11. Remove the pan from the heat.
- 12. Stir in the remaining olive oil and almonds.
- 13. Season the marinade with salt and pepper to taste.
- 14. Briefly shock the steamed cauliflower with cold water.
- 15. Add the caper berries to the cauliflower.
- 16. Mix everything thoroughly with the marinade.
- 17. Let the salad cool down to lukewarm.
- 18. Plate the salad on dishes.
- 19. Garnish the portions with rolled sardines.
