  1. 1. Rinse the cauliflower under running water.
  2. 2. Separate the cauliflower into individual florets.
  3. 3. Place the florets in a steamer insert.
  4. 4. Lightly salt the cauliflower.
  5. 5. Drizzle one tablespoon of oil over it.
  6. 6. Steam the cauliflower for about six minutes until it is still slightly crisp.
  7. 7. Peel the garlic clove while the cauliflower steams.
  8. 8. Press the garlic into a frying pan.
  9. 9. Add the wine, lemon juice, honey, and anchovies (small salted sardines) to the pan.
  10. 10. Heat the mixture while stirring.
  11. 11. Remove the pan from the heat.
  12. 12. Stir in the remaining olive oil and almonds.
  13. 13. Season the marinade with salt and pepper to taste.
  14. 14. Briefly shock the steamed cauliflower with cold water.
  15. 15. Add the caper berries to the cauliflower.
  16. 16. Mix everything thoroughly with the marinade.
  17. 17. Let the salad cool down to lukewarm.
  18. 18. Plate the salad on dishes.
  19. 19. Garnish the portions with rolled sardines.
