🍽️ Spicy Wild Garlic Pancakes with Feta

Ingredients
- 30 g Raisins (2 tbsp)
- 2 Eggs
- 150 g Spelt Whole Wheat Flour
- Salt
- 150 ml Mineral Water (with carbonation)
- 50 ml Milk (1.5% fat)
- 50 g Wild Garlic (1 bunch)
- 4 tsp Rapeseed Oil
- 100 g Sheep's Cheese
- 1 tsp Pink Peppercorns
Instructions
- 1. Place the raisins in a small bowl.
- 2. Pour 50 milliliters of hot water over the raisins.
- 3. Let the raisins soak in the water for 5 minutes.
- 4. Carefully separate the eggs.
- 5. Lift the egg white away from the yolk.
- 6. Put the flour into a large mixing bowl.
- 7. Add 1/2 teaspoon of salt to the flour.
- 8. Stir the flour and salt together briefly.
- 9. Add mineral water to the bowl little by little.
- 10. Add milk to the bowl little by little.
- 11. Add the egg yolks to the bowl.
- 12. Mix everything together into a smooth batter.
- 13. Let the batter rest for about 20 minutes.
- 14. Wash the wild garlic under running water.
- 15. Shake the wild garlic dry.
- 16. Remove thick stems or wilted green parts from the wild garlic.
- 17. Cut the wild garlic into fine strips.
- 18. Drain the water from the raisins.
- 19. Whip the egg white until stiff.
- 20. Gently fold the whipped egg white into the batter.
- 21. Heat 1 teaspoon of rapeseed oil in a non-stick pan.
- 22. Pour half of the batter into the hot pan.
- 23. Distribute half of the drained raisins over the batter.
- 24. Distribute half of the wild garlic over the batter.
- 25. Fry the pancake over medium heat for about 3 minutes.
- 26. Flip the pancake as soon as the underside is set.
- 27. Add another 1 teaspoon of rapeseed oil to the pan.
- 28. Finish frying the pancake on the other side.
- 29. Tear the finished pancake into small pieces using two forks.
- 30. Remove the pancake pieces from the pan.
- 31. Place the pancake pieces into a baking dish.
- 32. Preheat the oven.
- 33. Set the oven temperature to 100 degrees Celsius.
- 34. Keep the pancake pieces warm in the oven.
- 35. Repeat the process with the remaining ingredients.
- 36. Place the finished pancake pieces onto a plate.
- 37. Pat the feta cheese dry with a kitchen towel.
- 38. Crumble the feta cheese over the pancake pieces with your fingers.
- 39. Sprinkle the dish with peppercorns.
- 40. Serve the wild garlic pancake immediately.
