  1. 1. Remove the outer, wilted leaves from the savoy cabbage.
  2. 2. Rinse the head thoroughly under running water.
  3. 3. Cut out the hard core from the bottom of the head.
  4. 4. Carefully separate the individual leaves from the core.
  5. 5. Cut the leaves into roughly equal-sized pieces.
  6. 6. Place the savoy cabbage pieces into a large bowl.
  7. 7. Pour olive oil over the leaves.
  8. 8. Sprinkle salt over them.
  9. 9. Add harissa powder (a spicy paste made from chili peppers).
  10. 10. Add some lime juice.
  11. 11. Mix everything well with your hands until the leaves are evenly seasoned.
  12. 12. Lay the leaves flat and without overlapping on a baking sheet lined with baking paper.
  13. 13. Preheat the oven to 180 °C (160 °C with fan or gas mark 2–3).
  14. 14. Bake the chips for about 8 minutes until they are crispy.
  15. 15. Remove the chips from the oven.
  16. 16. Transfer them to a large bowl or arrange them as a garnish on a dish.
