  1. 1. Rinse the lamb fillets under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Crush peppercorns and juniper berries in a mortar.
  4. 4. Season the fillets with the crushed spice mix and salt.
  5. 5. Heat 2 tablespoons of oil in a frying pan.
  6. 6. Slowly sear the lamb until pink inside for about 8 minutes over medium heat.
  7. 7. Turn the meat occasionally while cooking.
  8. 8. Pour boiling water over the tomatoes.
  9. 9. Shock the tomatoes immediately with cold water.
  10. 10. Peel the skin off the tomatoes.
  11. 11. Quarter the tomatoes and remove the core.
  12. 12. Dice the tomatoes into small cubes.
  13. 13. Peel the onions and cut them in half.
  14. 14. Cut the onion halves into thin strips.
  15. 15. Sauté the onion strips in the remaining oil for 5 to 6 minutes until golden brown.
  16. 16. Fold the tomato cubes into the onions.
  17. 17. Season the mixture with honey, balsamic vinegar, salt, and cayenne pepper.
  18. 18. Divide the tomato and onion mixture among the plates.
  19. 19. Slice the lamb meat.
  20. 20. Place the lamb slices on top of the tomatoes.
  21. 21. Sprinkle the dish with fresh thyme.
  22. 22. Serve the dish immediately.
