🍽️ Spicy Tomatoes with Lamb

Ingredients
- 4 lamb fillets (approx. 180 g each)
- 0.5 tsp peppercorns
- 0.5 tsp juniper berries
- salt
- pepper (from the mill)
- 4 tbsp olive oil
- 5 tomatoes
- 4 onions
- honey
- white balsamic vinegar
- chopped thyme (for garnish)
Instructions
- 1. Rinse the lamb fillets under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Crush peppercorns and juniper berries in a mortar.
- 4. Season the fillets with the crushed spice mix and salt.
- 5. Heat 2 tablespoons of oil in a frying pan.
- 6. Slowly sear the lamb until pink inside for about 8 minutes over medium heat.
- 7. Turn the meat occasionally while cooking.
- 8. Pour boiling water over the tomatoes.
- 9. Shock the tomatoes immediately with cold water.
- 10. Peel the skin off the tomatoes.
- 11. Quarter the tomatoes and remove the core.
- 12. Dice the tomatoes into small cubes.
- 13. Peel the onions and cut them in half.
- 14. Cut the onion halves into thin strips.
- 15. Sauté the onion strips in the remaining oil for 5 to 6 minutes until golden brown.
- 16. Fold the tomato cubes into the onions.
- 17. Season the mixture with honey, balsamic vinegar, salt, and cayenne pepper.
- 18. Divide the tomato and onion mixture among the plates.
- 19. Slice the lamb meat.
- 20. Place the lamb slices on top of the tomatoes.
- 21. Sprinkle the dish with fresh thyme.
- 22. Serve the dish immediately.
