🍽️ Spicy Quesadillas with Green Salsa

Ingredients
- 0.5 bunch parsley
- 0.5 bunch mint
- 1 clove garlic
- 1 green chili pepper
- 0.5 lime (juice)
- 2 tbsp olive oil
- salt
- 1 small red onion
- 80 g corn can; drained weight)
- 4 whole wheat tortilla wraps
- 80 g cheddar (4 slices of 20 g each)
Instructions
- 1. Wash the parsley and mint thoroughly.
- 2. Shake the herbs dry.
- 3. Pluck the leaves from the stems.
- 4. Finely chop the herbs.
- 5. Peel the garlic.
- 6. Finely chop the garlic.
- 7. Wash the chili pepper.
- 8. Remove the seeds from the chili pepper.
- 9. Finely dice the chili pepper.
- 10. Squeeze the juice from the lime.
- 11. Mix the herbs, garlic, chili, and lime juice in a bowl.
- 12. Add one tablespoon of olive oil.
- 13. Stir the mixture well.
- 14. Season the salsa with salt.
- 15. Set the salsa aside.
- 16. Peel the onion.
- 17. Halve the onion.
- 18. Slice the onion into thin rings.
- 19. Drain the corn well.
- 20. Lay out the tortilla wraps flat.
- 21. Distribute the cheddar cheese on one half of each tortilla.
- 22. Place the onion rings on top.
- 23. Add the corn.
- 24. Add the green salsa.
- 25. Fold the tortillas over.
- 26. Heat one tablespoon of olive oil in a pan.
- 27. Fry the quesadillas one by one in the pan.
- 28. Keep the heat low.
- 29. Fry the first side for three minutes.
- 30. Fry the second side for three minutes as well.
- 31. Remove the quesadillas from the pan.
- 32. Cut the quesadillas in half.
- 33. Serve the quesadillas.
