🍝 Spicy Mozzarella Pasta

Ingredients
- 25 g dried tomatoes (without oil)
- 150 g whole grain pasta (e.g. bow-tie pasta)
- salt
- 125 g buffalo mozzarella
- 3 sprigs oregano
- 2 tbsp olive oil
- 20 g pine nuts
- pepper
Instructions
- 1. Place the dried tomatoes in a small bowl.
- 2. Pour boiling water over them.
- 3. Let the tomatoes soak in the water for 15 minutes.
- 4. Cook the pasta in plenty of salted water according to the package instructions until al dente.
- 5. Drain the mozzarella well.
- 6. Tear the cheese into small pieces.
- 7. Wash the oregano and shake it dry.
- 8. Pluck the leaves from the stems.
- 9. Finely chop the oregano leaves.
- 10. Drain the soaking water from the tomatoes.
- 11. Squeeze the tomatoes lightly.
- 12. Dice the tomatoes coarsely.
- 13. Heat the olive oil in a pan.
- 14. Toast the pine nuts over medium heat, stirring, for 2 to 3 minutes until lightly browned.
- 15. Add the diced tomatoes to the pan.
- 16. Sauté the tomatoes briefly.
- 17. Take 2 tablespoons of the hot pasta water.
- 18. Stir the pasta water into the tomatoes.
- 19. Drain the pasta.
- 20. Let the pasta drain well.
- 21. Add the pasta to the pan.
- 22. Mix the pasta thoroughly with the pine nuts and tomatoes.
- 23. Fold the mozzarella into the pasta.
- 24. Fold the chopped oregano into the pasta.
- 25. Season the pasta with salt and pepper.
- 26. Serve the pasta immediately.
