🍽️ Spicy Melon Cold Soup

Ingredients
- 750 g watermelon (0.5 watermelons; well chilled)
- 4 sprigs lemon thyme
- 200 ml classic vegetable broth
- salt
- pepper
- 3 spring onions
- 1 tbsp apple syrup
Instructions
- 1. Cut the watermelon into thick wedges using a large knife.
- 2. Peel the green rind off the wedges.
- 3. Remove the seeds from the melon wedges.
- 4. Cut the seeded melon pieces into bite-sized chunks.
- 5. Rinse the thyme sprigs under running water.
- 6. Shake the thyme sprigs dry.
- 7. Set aside 2 thyme sprigs.
- 8. Strip the leaves off the remaining thyme sprigs.
- 9. Place the thyme leaves, melon chunks, and broth into a stand mixer or use a hand blender.
- 10. Blend the mixture until smooth.
- 11. Season the puree with salt and pepper.
- 12. Wash the spring onions.
- 13. Let the spring onions drain.
- 14. Trim the dry ends of the spring onions.
- 15. Slice the spring onions diagonally into thin rings.
- 16. Heat a non-stick pan.
- 17. Add the spring onion rings to the hot pan without adding extra fat.
- 18. Toast the spring onions briefly.
- 19. Add the apple syrup to the pan.
- 20. Bring the mixture to a boil once.
- 21. Let the mixture cool down slightly.
- 22. Pour the melon puree into a bowl.
- 23. Spread the cooled spring onions over the melon puree.
- 24. Take the 2 thyme sprigs you set aside earlier.
- 25. Garnish the cold soup with these thyme sprigs.
- 26. Serve the Spicy Melon Cold Soup.
