  6. 6. Shake the thyme sprigs dry.
  7. 7. Set aside 2 thyme sprigs.
  8. 8. Strip the leaves off the remaining thyme sprigs.
  9. 9. Place the thyme leaves, melon chunks, and broth into a stand mixer or use a hand blender.
  10. 10. Blend the mixture until smooth.
  11. 11. Season the puree with salt and pepper.
  12. 12. Wash the spring onions.
  13. 13. Let the spring onions drain.
  14. 14. Trim the dry ends of the spring onions.
  15. 15. Slice the spring onions diagonally into thin rings.

  17. 17. Add the spring onion rings to the hot pan without adding extra fat.
