🍽️ Spicy Marinated Artichokes

Ingredients
- 8 artichokes
- lemons
- 10 peppercorns
- 2 bay leaves
- 1 tsp fennel seeds
- 1 celery stalk
- olive oil
- salt
- 2 garlic cloves
- 1 bunch arugula (or dandelion greens as a substitute)
Instructions
- 1. Rinse the artichokes thoroughly under running water.
- 2. Remove the tough outer leaves.
- 3. Cut off the bottom end of the stem.
- 4. Pull off more leaves until only the soft heart remains.
- 5. Pour 500 milliliters of cold water into a pot.
- 6. Add 100 milliliters of olive oil.
- 7. Add lemon juice to the liquid.
- 8. Add bay leaves to the pot.
- 9. Add peppercorns.
- 10. Add fennel seeds.
- 11. Finely chop the celery and add it to the pot.
- 12. Salt the liquid to taste.
- 13. Place the prepared artichokes into the mixture.
- 14. Bring the water to a boil.
- 15. Reduce the heat to medium.
- 16. Cook the artichokes for about 20 to 25 minutes.
- 17. Let the artichokes cool down in the hot cooking water.
- 18. Remove the artichokes from the water.
- 19. Let them drain well.
- 20. Wash the arugula thoroughly.
- 21. Spin-dry the arugula.
- 22. Peel the garlic.
- 23. Slice the garlic into thin pieces.
- 24. Heat 5 tablespoons of oil in a pan.
- 25. Fry the garlic briefly.
- 26. Add the arugula to the pan.
- 27. Sauté the arugula briefly.
- 28. Remove the pan from the heat.
- 29. Add the artichokes to the pan.
- 30. Mix everything well together.
- 31. Let the mixture cool down a bit.
- 32. Drizzle the dish with lemon juice.
- 33. Serve the artichokes.
