  3. 3. Cut off the bottom end of the stem.
  4. 4. Pull off more leaves until only the soft heart remains.
  5. 5. Pour 500 milliliters of cold water into a pot.
  6. 6. Add 100 milliliters of olive oil.
  7. 7. Add lemon juice to the liquid.
  8. 8. Add bay leaves to the pot.
  9. 9. Add peppercorns.
  10. 10. Add fennel seeds.
  11. 11. Finely chop the celery and add it to the pot.
  12. 12. Salt the liquid to taste.
  13. 13. Place the prepared artichokes into the mixture.
  14. 14. Bring the water to a boil.
  15. 15. Reduce the heat to medium.
  16. 16. Cook the artichokes for about 20 to 25 minutes.
  17. 17. Let the artichokes cool down in the hot cooking water.
  18. 18. Remove the artichokes from the water.
  19. 19. Let them drain well.
  20. 20. Wash the arugula thoroughly.
  21. 21. Spin-dry the arugula.
  22. 22. Peel the garlic.
  23. 23. Slice the garlic into thin pieces.
  24. 24. Heat 5 tablespoons of oil in a pan.

  28. 28. Remove the pan from the heat.
