🍽️ Sausages with Tomato Sauce

Ingredients
- 0.5 ripe mango
- 0.5 red chili pepper
- 1 clove garlic
- 3 tbsp olive oil
- 1 pinch curry powder
- 1 tbsp honey
- 2 tbsp pickled green peppercorns
- 3 tbsp orange juice
- 500 g peeled tomatoes (can)
- salt
- pepper (from the mill)
- 1 pinch ground cumin
- 4 coarse frying sausages
Instructions
- 1. Peel the mango and cut the flesh into small pieces.
- 2. Wash the chili pepper, cut it lengthwise, and remove the seeds and white inner membranes.
- 3. Finely chop the chili pepper.
- 4. Peel the garlic.
- 5. Heat some olive oil in a small pot.
- 6. Press the garlic into the pot and add the chili.
- 7. Sauté the vegetables briefly.
- 8. Dust everything with curry powder.
- 9. Add the honey and peppercorns.
- 10. Deglaze the mixture with orange juice and tomatoes.
- 11. Let the sauce simmer gently for about 10 minutes.
- 12. Mash the sauce slightly with a fork.
- 13. Stir the mango pieces into the sauce.
- 14. Season the sauce with salt, pepper, and cumin.
- 15. Remove the sauce from the heat and let it rest briefly.
- 16. Grill the sausages on a hot grill or in a pan for about 10 minutes, turning them on all sides.
- 17. Divide some of the tomato-mango sauce among four small bowls.
- 18. Place the sausages on top of the sauce.
- 19. Serve the sausages with a bread roll.
