🍽️ Sausages with Colorful Lentil Vegetables

Ingredients
- 250 g Puy lentils
- 500 ml vegetable broth
- 2 red onions
- 2 bell peppers (red and yellow)
- 2 garlic cloves
- 6 sprigs thyme
- salt
- pepper (from the mill)
- 2 tbsp olive oil
- 8 sausages
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Rinse the lentils thoroughly and let them drain.
- 3. Place the lentils and broth into a baking dish.
- 4. Put the dish in the oven for about 15 minutes.
- 5. Stir the lentils occasionally during cooking.
- 6. Peel the onions and cut them in half.
- 7. Slice the onion halves into thin strips.
- 8. Wash the bell peppers thoroughly.
- 9. Cut the bell peppers in half and remove the seeds and core.
- 10. Dice the pepper flesh into small cubes.
- 11. Peel the garlic cloves.
- 12. Slice the garlic into thin rounds.
- 13. Check if the lentils have almost absorbed the liquid.
- 14. Add the prepared vegetables to the lentils.
- 15. Add the thyme and mix everything well.
- 16. Season the mixture with salt and pepper to taste.
- 17. Drizzle some oil over the vegetables.
- 18. Place the sausages on top of the lentils.
- 19. Increase the oven temperature to 220 degrees Celsius fan-forced.
- 20. Bake the sausages for another 10 minutes until golden brown.
- 21. Taste the dish one last time and adjust seasoning if needed.
- 22. Serve the dish warm.
