🍽️ Fresh Chickpea and Avocado Wraps

Ingredients
- 160 g chickpeas (canned; drained weight)
- 0.5 bunch parsley
- 1 avocado
- 80 g cucumber
- 2 carrots
- 4 whole wheat tortilla wraps
- salt
- pepper
Instructions
- 1. Open the can of chickpeas and drain the liquid.
- 2. Rinse the chickpeas under cold water.
- 3. Dry the chickpeas thoroughly with a kitchen towel.
- 4. Wash the fresh parsley under running water.
- 5. Shake the parsley dry.
- 6. Chop the parsley leaves coarsely.
- 7. Cut the avocado in half.
- 8. Remove the pit from the avocado half.
- 9. Dice the avocado flesh into small cubes.
- 10. Wash the cucumber thoroughly.
- 11. Wash the carrots thoroughly.
- 12. Slice the cucumber into thin rounds.
- 13. Peel the carrots.
- 14. Grate the peeled carrots finely.
- 15. Take a tortilla flatbread.
- 16. Cut the flatbread from the center to the edge.
- 17. Place half of the chickpeas on one quarter of the flatbread.
- 18. Mash the chickpeas slightly with a fork.
- 19. Sprinkle the chopped parsley over the mashed chickpeas.
- 20. Place the avocado cubes on the next quarter of the flatbread.
- 21. Mash the avocado cubes slightly with a fork.
- 22. Place the cucumber slices on another quarter of the flatbread.
- 23. Place the grated carrots on the last quarter of the flatbread.
- 24. Season the wrap to taste with salt.
- 25. Season the wrap to taste with pepper.
- 26. Fold the first quarter with the chickpeas towards the center.
- 27. Fold the second quarter with the avocado towards the center.
- 28. Fold the third quarter with the cucumber towards the center.
- 29. Fold the fourth quarter with the carrots towards the center.
- 30. Heat a pan over medium heat.
- 31. Place the folded wrap into the hot pan.
- 32. Fry the wrap without additional fat.
- 33. Fry the first side for about 1 to 2 minutes.
- 34. Turn the wrap over.
- 35. Fry the second side for about 1 to 2 minutes.
- 36. Remove the wrap from the pan.
- 37. Preheat a contact grill.
- 38. Place the wrap into the preheated contact grill.
- 39. Close the contact grill.
- 40. Grill the wrap for about 5 minutes.
