  1. 1. Rinse the tuna briefly and pat it dry with a kitchen towel.
  2. 2. Cut the tuna into small, bite-sized cubes.
  3. 3. Peel the ginger and the garlic clove.
  4. 4. Dice the ginger and garlic very finely.
  5. 5. Add the oil, turmeric, salt, pepper, and cayenne pepper to the tuna cubes.
  6. 6. Mix everything well so the tuna is evenly seasoned.
  7. 7. Let the marinade sit for about 15 minutes.
  8. 8. Peel the mango and carefully cut the flesh away from the pit.
  9. 9. Dice the mango flesh.
  10. 10. Peel the cucumber and dice it as well.
  11. 11. Peel the onion and chop it finely.
  12. 12. Wash the tomato and remove the hard stem area.
  13. 13. Dice the tomato.
  14. 14. Wash the chili pepper.
  15. 15. Seed the chili pepper to your liking and dice it finely.
  16. 16. Wash the cilantro and parsley and shake them dry.
  17. 17. Finely chop the herb leaves.
  18. 18. Combine the mango, cucumber, onion, tomato, chili pepper, and herbs in a bowl.
  19. 19. Add the lime juice and mix everything well.
  20. 20. Season the salsa with salt and pepper to taste.
  21. 21. Heat a frying pan over high heat.
  22. 22. Fry the tuna in the hot pan for 2 to 3 minutes.
  23. 23. Turn the tuna once while frying.
  24. 24. Warm the wraps in a separate pan.
  25. 25. Fry each wrap for about 1 minute per side.
  26. 26. Distribute the fried tuna onto the warm wraps.
  27. 27. Add the mango salsa on top of the tuna.
  28. 28. Drizzle 2 tablespoons of sour cream onto each wrap.
  29. 29. Roll the wraps tightly.
  30. 30. Serve the wraps immediately.
