Ingredients
- 250 g flour
- 1 tsp baking powder
- 1 pinch salt
- 200 g sugar
- 1 egg
- 70 g butter
- 2 tsp lemon juice
- 100 ml buttermilk
- 50 g coconut flakes
Instructions
- 1. Preheat the oven to 180 degrees Celsius (conventional heat).
- 2. Beat the butter, sugar, egg, and lemon juice with an electric hand mixer using the whisk attachment until creamy.
- 3. Mix the flour, baking powder, and salt in a separate bowl.
- 4. Alternately add the flour mixture and the buttermilk to the butter-sugar mixture and stir everything well.
- 5. Gently fold the coconut flakes into the dough with a spoon.
- 6. Line a baking tray with baking paper.
- 7. Take a teaspoon of dough and form three small mounds on the tray so they look like small clouds.
- 8. Repeat with the remaining dough and ensure there is enough space between each mound.
- 9. Bake the cookies for 10 to 12 minutes in the preheated oven.
