  2. 2. Beat the butter, sugar, egg, and lemon juice with an electric hand mixer using the whisk attachment until creamy.
  3. 3. Mix the flour, baking powder, and salt in a separate bowl.
  4. 4. Alternately add the flour mixture and the buttermilk to the butter-sugar mixture and stir everything well.
  5. 5. Gently fold the coconut flakes into the dough with a spoon.
  6. 6. Line a baking tray with baking paper.
  7. 7. Take a teaspoon of dough and form three small mounds on the tray so they look like small clouds.
  8. 8. Repeat with the remaining dough and ensure there is enough space between each mound.
  9. 9. Bake the cookies for 10 to 12 minutes in the preheated oven.
