  1. 1. Cook the noodles in salted water according to the package instructions.
  2. 2. Wash the chicken breast fillets and pat them dry with a kitchen towel.
  3. 3. Slice the chicken breast fillets into thin slices.
  4. 4. Wash the leek, remove the hard ends and cut it into rings.
  5. 5. Clean the mushrooms and slice them.
  6. 6. Peel the carrot and halve or quarter it depending on the size.
  7. 7. Wash the chili pepper, remove the stem and chop it finely.
  8. 8. Heat oil in the wok and fry the chicken for about 1 minute until golden brown.
  9. 9. Push the chicken to the side of the wok.
  10. 10. Fry the mushrooms in the center of the wok.
  11. 11. Push the mushrooms to the side.
  12. 12. Fry the leek, carrot, chili and garlic for 1 to 2 minutes.
  13. 13. Mix all ingredients in the wok well together.
  14. 14. Add the drained noodles.
  15. 15. Finish frying everything together for 2 to 3 minutes.
  16. 16. Season with fish sauce and soy sauce.
  17. 17. Serve the dish garnished with peppercorns and coriander.
