🍽️ Creamy Savoy Cabbage, Potato and Lentil Soup

Ingredients
- 1 onion
- 1 clove garlic
- 300 g firm-boiling potatoes
- 400 g savoy cabbage
- 100 g red lentils
- 1 tbsp olive oil
- 2 tbsp tomato paste
- 800 ml vegetable broth
- 1 tbsp fresh chopped dill
- salt
- pepper
Instructions
- 1. Peel the onion and garlic. Dice both ingredients very finely.
- 2. Peel the potatoes and wash them thoroughly. Cut them into small pieces.
- 3. Wash the savoy cabbage and remove the hard stems. Chop the leafy greens into small pieces as well.
- 4. Rinse the lentils under cold water and let them drain well.
- 5. Heat some oil in a pot. Sauté the onions and garlic in it until they are soft and translucent.
- 6. Stir in the tomato paste and let it fry briefly.
- 7. Deglaze the mixture with the vegetable broth.
- 8. Add the potato pieces, savoy cabbage, and lentils to the pot.
- 9. Let the soup simmer on low heat for about 15 minutes until everything is tender.
- 10. Finely chop the dill and stir it into the finished soup.
- 11. Season the soup to taste with salt and pepper.
- 12. Serve the soup hot and enjoy.
