🍽️ Hearty Savoy Cabbage and Apple Vegetable Dish

Ingredients
- 1 shallot
- 400 g savoy cabbage
- 200 g tart apples (1 tart apple)
- 50 g dried dates (pitted)
- 2 tbsp olive oil
- 200 g red lentils
- 300 ml classic vegetable broth
- salt
- pepper
- 50 g hazelnuts
- 50 g arugula (0.5 bunch)
Instructions
- 1. Peel the shallot and chop it very finely.
- 2. Remove the hard core from the savoy cabbage, wash the vegetable, and let it drain well.
- 3. Cut the washed savoy cabbage into thin strips.
- 4. Wash the apple, dry it, and cut it into four quarters.
- 5. Remove the core from the apple quarters and dice the flesh.
- 6. Halve the dates, remove the pits, and cut them into thin strips.
- 7. Heat the oil in a large non-stick pan.
- 8. Sauté the chopped shallot in the hot oil briefly until it becomes translucent.
- 9. Add the savoy cabbage strips to the pan and sauté them for about five minutes.
- 10. Stir in the apple cubes, the lentils, and the date strips into the vegetables.
- 11. Simmer the mixture over medium heat for another two minutes.
- 12. Pour in the broth and let everything simmer for another ten minutes.
- 13. Season the finished vegetable dish with salt and pepper to taste.
- 14. Coarsely chop the hazelnuts while the vegetables are cooking.
- 15. Toast the nuts in a small pan without fat until they are fragrant.
- 16. Remove the pan from the heat as soon as the nuts are toasted.
- 17. Clean and wash the arugula.
- 18. Shake the arugula dry.
- 19. Finely chop the dry arugula.
- 20. Sprinkle the chopped arugula and the toasted hazelnuts over the warm vegetables.
- 21. Serve the dish immediately.
