🍽️ Winter Salad

Ingredients
- 4 chicory
- 3 sprigs parsley
- 2 kiwis
- 2 tbsp hazelnuts (15 g)
- 300 g Comté cheese (45 % fat in dry matter)
- 1 star anise
- 4 tbsp olive oil (40 ml)
- 1 tsp honey
- 4 tbsp white wine vinegar (60 ml)
- salt
- pepper
Instructions
- 1. Wash the chicory and parsley thoroughly, trim the chicory and cut into strips. Shake the parsley dry, separate the leaves and chop finely. Peel the kiwis, quarter lengthwise and slice. Roughly chop the hazelnuts and cut the Comté into small cubes.
- 2. For the dressing, grind the star anise in a mortar and mix well with oil, honey and vinegar. Season with salt and pepper.
- 3. Gently mix the chicory, parsley, kiwis and Comté with some dressing and arrange on plates. Drizzle the remaining dressing over and sprinkle with the hazelnuts. Serve the winter salad with chicory and kiwi.
