Ingredients
- soft butter (for the pan)
- 80 g peeled almond kernels
- 40 g walnut kernels
- 250 g candied fruits (e.g. cranberries, cherries, apricots, citron, orange peel)
- 4 eggs
- 50 g marzipan raw mass
- 50 g sugar
- 1 tbsp vanilla sugar
- rum flavor
- 1 tsp orange zest
- 150 g soft butter
- 70 g cornstarch
- 1 tsp baking powder
- 1 pinch salt
- 60 g powdered sugar
- 200 g flour
Instructions
- 1. Brush the baking pan lightly with butter.
- 2. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 3. Roughly chop the almonds, walnuts, and fruits.
- 4. Separate the eggs and beat the egg whites until stiff peaks form.
- 5. Whisk the marzipan with the sugar and vanilla sugar in a bowl.
- 6. Add the rum flavoring and the orange zest.
- 7. Stir in the egg yolks one by one, and then stir in the butter.
- 8. Add the starch, baking powder, and salt, and mix everything well.
- 9. Mix the chopped fruits and nuts with the powdered sugar and the flour.
- 10. Fold in the fruit and nut mixture and the egg whites into the butter mixture.
- 11. Pour the batter into the prepared pan.
- 12. Smooth the surface.
- 13. Bake the cake in the oven for about 1 hour.
- 14. Perform the skewer test to check for doneness.
- 15. Let the cake cool down in the pan.
- 16. Carefully release the cake from the pan.
- 17. Turn the cake out onto a board or a plate.
- 18. Dust the cake with powdered sugar to taste or serve it plain.
